These bars were another popular cookie we sold at Mom's Seafood Market--and since I made all the cookies we sold and these are pretty easy to make they were one of my favorites. The eponymous name gives it away: they do taste like little pecan pies--but not quite as cloyingly sweet.

Pecan Pie Bars
2 cups flour
1/3 cup sugar
1/4 tsp salt
1/2 cup (1 stick) butter, cut
into pieces
2 eggs
3/4 cup sugar
3/4 cup Karo Dark Corn Syrup
2 Tbs butter, melted
1 tsp vanilla
1-1/4 cups coarsely chopped
pecans
Spray a 9x13 pan with cooking
spray. Preheat oven to 350 F. Mix flour, sugar and salt in food processor; add
butter pieces and process until mixture resembles coarse crumbs. Press into bottom and 1/4 inch up sides of
prepared pan and bake 15 minutes or until golden brown.
In a large bowl, beat eggs,
corn syrup, sugar, margarine and vanilla until well blended. Stir in pecans. Pour over hot crust and spread evenly.
Bake 20 additional minutes or
until filling is firm around edges and slightly firm in center. Cool completely. Cut into 1-1/2 x 2-inch bars.
